Celebrating my Birthday with the kiddo's this evening. Dinner, cake and goodies, oh yeah!

61 Years ago today, God granted me life!  What a blessing!  I'm such a lucky lady to have a beautiful family and a very special Hubby!  Thank You Lord for this day!

Well, decided with this freezing cold, nothing better to do than drink some yummy hot chocolate and eat a Rainforest Chewy Bar.  Recipe below is from Post Cereal.  They are really good, try it out!

1/4 C Honey
2 Tblsp. butter
1 pkg. (10 oz) marshmallows
     (about 36)
6 cups Honey Bunches of Oats Cereal
1 cup dried apricots, chopped
1 cup almonds, chopped
1/2 cup sunflower kernels

Microwave honey and butter in a large microwavable bowl on HIGH 1 min; stir until well blended.  Add marshmallows; toss to coat.  Microwave 1-1/2 min. or until marshmallows are puffed; stir until blended.  Add remaining ingredients; mix well.  Press cereal mixture firmly into greased 13x9 inch pan.  Cool.  Cut into 24 bars.

My speed, fast, easy and delicious!  I substituted pumpkin seeds for the sunflower kernels,  that is what I had on hand.  Enjoy!
